Seafood Legacy has been supporting the activities of Relais & Châteaux Delegation Japan & Korea since October 2019. Regarding this year’s commitment, we have assessed the sustainability of shellfish used by the chefs of the Delegation Japan & Korea and provided advice.

Among shellfish, bivalves, which do not require to be fed by humans for their growth, are recognized as an indicator for marine ecosystems. Through a wide range of activities, such as using bivalves for the menu, holding cooking classes, sharing recipes, and visiting producers, chefs from Relais & Châteaux around the world will promote the beauty of bivalves, which are sustainable ingredients, to consumers.
